Surveyors view F371 violations as the ticket to helping prevent food-borne illness in nursing facilities, which can be fatal to residents. The following real-life citation provides a "heads up" for what you don't want to see in your kitchen.
 

  •  "The facility failed to provide a clean and sanitary dietary department. Numerous problems were evident during a tour on 9/8/02, representing a long-term lack of an ongoing cleaning program."

  •  "Fans observed in the walk-in refrigerator, which view directly onto shelving containing food items, were
    coated with a heavy build-up of dust and grease."

  •  "The floor in the walk-in refrigerator was heavily soiled with dried food spills."

  •  "The convection oven was leaking water onto the floor; a shelf located beneath the oven, which was used to store clean baking pans, was wet with leaking water."

  •  "The vents of the exhaust hood located directly above the cooking area had a heavy accumulation of grease and dust."
