Date of Service on Overnight Surgery

We don't run into this very often, but if a surgery starts on one day (say Wednesday,11:00pm) and ends on another day (say Thursday, 1:45am), which date do you use for the DOS when you bill - Wednesday or Thursday? I want to be able to show some kind of documentation to the physicians that states the correct DOS, but I can't seem to find any CMS or other guidance. Can someone point me in the right direction?
