I'm a beginning CPC coder just finishing Practicode. I know I want to get the e-books this time, but there are so many bundles that it's confusing. Is this the ideal bundle for someone like me? https://www.aapc.com/medical-coding-books/physician-bundle-1/ebook/

That bundle comes with the AMA CPT book which is typically more expensive than the AAPC Procedural Code book bundle https://www.aapc.com/medical-coding-books/physician-bundle-3/ebook/#Description
I've never used "e-books". I typically use an online encoder that my employer supplies. Pre-2020, I would order paper books. But with working hybrid, I did not want to lug coding books around and realized I can work just fine with an online encoder only. If I'm going to be taking an AAPC test that year, then I need paper books and require the more expensive AMA CPT.
Almost all employers will supply you with the tools you need. Whether that's paper books, e-books, or an online encoder.
If you will be doing pro-fee coding, any bundle that includes books for CPT, ICD10 and HCPCS would meet your needs.
